This recipe keeps things simple yet delicious, making it a foolproof breakfast favorite.

Ingredients

  • 6 large flour tortillas
  • 8 large eggs
  • ½ cup milk
  • 1 lb breakfast sausage (or bacon, chorizo, or ham)
  • 1 cup shredded cheddar cheese (or a mix of cheeses)
  • ½ cup diced bell peppers (red, green, or yellow)
  • ½ cup diced onions
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 2 tablespoons butter
  • Fresh parsley or cilantro for garnish (optional)

Instructions

1. Cook the Sausage & Veggies

In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain any excess grease. In the same skillet, sauté the onions and bell peppers for a few minutes until they become soft and fragrant.

2. Prepare the Eggs

In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika. Melt butter in a non-stick pan and scramble the eggs over medium-low heat until just set (they will continue cooking in the oven).

3. Assemble the Burritos on the Sheet Pan

Grease a large sheet pan with butter or non-stick spray. Lay out the tortillas so that they overlap slightly, creating a large surface for the filling.

4. Layer the Ingredients

Evenly spread the cooked sausage and sautéed veggies over the tortillas. Next, add the fluffy scrambled eggs on top, followed by a generous sprinkle of shredded cheese.

5. Fold & Bake

Carefully fold the edges of the tortillas inward, overlapping slightly to create a sealed burrito sheet. Flip it over so that the seam side is down, then brush the top with melted butter or oil for a golden, crispy finish.

Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the top is golden brown and the cheese is melted.

6. Slice & Serve

Remove from the oven, let it cool for a couple of minutes, then slice into squares or burrito-sized portions. Garnish with fresh parsley or cilantro for an extra pop of color.
