- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese, for topping
- Paprika, for garnish
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a one-quart casserole dish.
- In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for about a minute to create a roux, which will help thicken your sauce.
- Gradually add the cold milk to the roux while continuously whisking to prevent any lumps. Season with salt and a dash of cayenne pepper. Keep stirring and cook on low heat until the sauce is smooth and begins to boil.
- Reduce the heat to low and add in the grated sharp cheddar cheese. Stir until the cheese is melted and the sauce is smooth.
- Arrange half of the sliced potatoes in the prepared casserole dish. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and cheese sauce, creating layers.
- Sprinkle the additional grated cheese on top and dust with paprika for a touch of color.
- Bake uncovered for about 1 hour, or until the potatoes are tender and the top is golden and bubbly.
