Ingredients
For the Meatloaf
- 1 medium onion, finely chopped (about 1/2 cup)
- 1 cup panko breadcrumbs
- 3 garlic cloves, crushed
- 2 eggs
- 1 teaspoon Italian seasonings
- ½ teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- ¼ cup chopped parsley
- 2 cubes beef bouillon, crumbled
- 2 pounds ground beef
For the Glaze
- ½ cup ketchup
- ¼ cup brown sugar
- 1 tablespoon lemon juice
- 2 teaspoons yellow mustard
Instructions
- Preheat your oven to 350°F (175°C).
- For the glaze, combine all the ingredients in a small bowl and stir until smooth. Set aside.
- In a large mixing bowl, combine the panko breadcrumbs and chopped onion. Stir well to ensure the breadcrumbs are moist.
- Add crushed garlic, eggs, Italian seasonings, black pepper, Worcestershire sauce, chopped parsley, and crumbled beef bouillon to the mixture. Pour in about 1/3 of the glaze and mix thoroughly.
- Once everything is well incorporated, shape the mixture into a loaf.
- Place two slices of bread at the bottom of a 9×5 inch loaf pan to absorb excess grease while baking. Gently place the meatloaf on top.
- Bake for 1 hour, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.
- Carefully drain any excess fat, then pour the remaining glaze over the top of the meatloaf. Return it to the oven for another 10 minutes to let the glaze caramelize.
- Let the meatloaf rest for a few minutes before slicing. Serve with extra glaze on the side for that perfect touch of sweetness.
