  • 4 medium beets (2 red, 2 golden), peeled & cut into wedges
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon balsamic vinegar

For the Salad:

  • 1 fresh burrata ball
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (or aged balsamic vinegar)
  • 1 teaspoon honey (optional, for extra sweetness)
  • Fresh thyme or basil leaves (for garnish)
  • Sea salt & black pepper (to taste)

Optional Add-Ins:

  • Toasted nuts (walnuts, pistachios, or almonds)

  • Microgreens or arugula for added freshness

Instructions

Step 1: Roast the Beets

  1. Preheat your oven to 400°F (200°C).
  2. Toss peeled & chopped beets with olive oil, salt, and black pepper on a baking sheet.

  4. Drizzle with balsamic vinegar right after removing from the oven.

Step 2: Assemble the Salad

  • Arrange roasted beets on a serving plate.
  • Place burrata in the center, letting it slightly tear open.
  • Drizzle with olive oil, balsamic glaze, and honey.
  • Sprinkle with fresh thyme, sea salt, and black pepper.

Step 3: Serve & Enjoy

  • Serve immediately while the beets are still warm and the burrata is soft and creamy.
