Instructions
- Preheat the Oven: Preheat your oven to 325°F (165°C).
- Prepare the Crust: In a bowl, mix the crushed chocolate graham crackers with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Set aside.
- Make the Filling: In a large bowl, beat the cream cheese, peanut butter, granulated sugar, and vanilla extract until smooth. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the heavy cream.
- Combine and Bake: Fold in the chopped Reese’s Peanut Butter Cups and pour the filling over the prepared crust. Bake for 55-60 minutes or until the center is just set and the top appears dull.
- Cool: Remove from the oven and cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen the cheesecake; let it cool for 1 hour longer.
- Chill: Refrigerate overnight for the best flavor and texture.
- Serve: Before serving, top with chocolate ganache and decorate with additional Reese’s Peanut Butter Cups.
