Ingredients
- 1 box red velvet cake mix
- 1 egg
- ½ cup (113g) unsalted butter, softened
For the Cheesecake Layer:
- 8 ounces (226g) cream cheese, room temperature
- 1 large egg, room temperature
- ¼ cup (50g) granulated sugar
- ¼ cup (61g) sour cream, room temperature
- 1 teaspoon vanilla extract
- ½ cup mini chocolate chips
Instructions
- Preheat the Oven:
- Set your oven to 350°F (175°C). Line a 9×13” baking pan with foil and spray with cooking spray for easy removal.
- Prepare the Red Velvet Base:
- In a stand mixer with the paddle attachment, or using a hand mixer, combine the softened butter, 1 egg, and red velvet cake mix until a thick dough forms.
- Press the dough evenly into the bottom of the prepared pan.
- Make the Cheesecake Layer:
- Beat the cream cheese until smooth. Add granulated sugar and mix until fully incorporated.
- Beat in the egg, sour cream, and vanilla extract until the mixture is smooth and lump-free. Ensure all ingredients are at room temperature for best results.
- Stir in the mini chocolate chips.
- Assemble and Bake:
- Pour the cheesecake mixture over the red velvet base, spreading it evenly.
- Bake for 30-40 minutes, or until the edges start to brown and the center is set but still jiggles slightly when shaken.
- Cool and Chill:
- Allow the bars to cool to room temperature. Chill in the refrigerator for at least 4 hours, or overnight, to fully set before slicing into bars.
