Ingredients
- 1 2/3 cups graham cracker crumbs
- 1/2 cup butter (1 stick), melted
- 2 tbsp sugar
- 3 cups sweetened, flaked coconut
- 14 oz sweetened condensed milk (1 can)
- 1 cup seedless raspberry preserves (or your preferred flavor)
- 1/2 cup pecans, chopped
- 1/2 cup semisweet chocolate chips
- 1/3 cup white baking chips
- 1 tsp shortening
Instructions
- Prepare the Crust:
- Preheat the oven to 350°F (177°C).
- In a small bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a lightly greased 9×13-inch baking dish.
- Layer with Coconut and Milk:
- Evenly sprinkle the flaked coconut over the crust. Pour the sweetened condensed milk over the coconut layer, ensuring it’s evenly spread.
- Bake:
- Bake for 20-25 minutes, or until the coconut layer turns golden brown. Let the crust cool completely.
- Add Raspberry and Pecans:
- Spread the raspberry preserves evenly over the cooled crust. Sprinkle the chopped pecans on top for a delightful crunch.
- Drizzle with Chocolate:
- Melt the semisweet chocolate chips in a microwave-safe bowl, stirring until smooth. Drizzle the melted chocolate over the pecans.
- In another bowl, melt the white baking chips with the shortening, stirring until smooth. Drizzle this over the chocolate layer for a festive touch.
- Set and Slice:
- Allow the bars to firm up by setting them in the fridge or on the counter. Once firm, cut into 36 bars.
