Ingredients

  • 1 2/3 cups graham cracker crumbs
  • 1/2 cup butter (1 stick), melted
  • 2 tbsp sugar
  • 3 cups sweetened, flaked coconut
  • 14 oz sweetened condensed milk (1 can)
  • 1 cup seedless raspberry preserves (or your preferred flavor)
  • 1/2 cup pecans, chopped
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup white baking chips
  • 1 tsp shortening

Instructions

  1. Prepare the Crust:

  • Preheat the oven to 350°F (177°C).
  • In a small bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a lightly greased 9×13-inch baking dish.

  1. Layer with Coconut and Milk:

  • Evenly sprinkle the flaked coconut over the crust. Pour the sweetened condensed milk over the coconut layer, ensuring it’s evenly spread.

  1. Bake:

  • Bake for 20-25 minutes, or until the coconut layer turns golden brown. Let the crust cool completely.

  1. Add Raspberry and Pecans:

  • Spread the raspberry preserves evenly over the cooled crust. Sprinkle the chopped pecans on top for a delightful crunch.

  1. Drizzle with Chocolate:

  • Melt the semisweet chocolate chips in a microwave-safe bowl, stirring until smooth. Drizzle the melted chocolate over the pecans.
  • In another bowl, melt the white baking chips with the shortening, stirring until smooth. Drizzle this over the chocolate layer for a festive touch.

  1. Set and Slice:

  • Allow the bars to firm up by setting them in the fridge or on the counter. Once firm, cut into 36 bars.
