Pizza Grilled Cheese

If you’re anything like me, you often find yourself torn between the comforting gooeyness of a grilled cheese sandwich and the delightful flavors of a pepperoni pizza. What if I told you that you don’t have to choose? Enter the Pizza Grilled Cheese—a mouthwatering fusion of two beloved comfort foods that brings together melted mozzarella, savory pepperoni, and a buttery, crispy exterior. This dish is not just a meal; it’s an experience, perfect for a cozy night in or as a fun twist for your next gathering with friends and family.

Ingredients

    • For the Garlic Butter Spread:

    • ½ cup unsalted butter, very soft

    • 1 tablespoon grated Parmesan cheese

    • 1 teaspoon garlic powder

    • ½ teaspoon dried Italian seasoning

    • For Assembly:

    • 8 slices white bread

    • 12 slices mozzarella cheese

    • 6 ounces pepperoni

    • Warm pizza sauce for dipping

Instructions

    1. In a medium-sized bowl, combine the butter, Parmesan cheese, garlic powder, and Italian seasoning until smooth.

    1. Spread the butter mixture evenly over one side of each slice of bread. Place the slices butter side up on a sheet tray until ready to use.

    1. Heat a skillet over medium-low heat. Place one slice of bread, butter side down, in the skillet. Layer with a slice of mozzarella, followed by 6 pepperoni slices, another slice of mozzarella, 6 more pepperonis, and a final slice of mozzarella.

    1. Top with another slice of bread, butter side up. (You may have leftover pepperoni.)

    1. Cover the skillet with a lid to help melt the cheese. Cook until the bottom is golden brown, about 3-5 minutes. Carefully flip the sandwich using a spatula, cover again, and continue cooking until golden brown and the cheese is melted.

    1. Serve immediately with warm pizza sauce for dipping and enjoy!
