1 cup unsalted butter, softened

½ cup powdered sugar

1 egg

1 tsp vanilla extract

½ tsp almond extract (optional)

2 cups all-purpose flour

¾ cup finely ground pistachios
Topping

½ cup chopped pistachios

⅓ cup melted dark chocolate

Flaky sea salt (optional)
Instructions

Preheat oven to 350°F and line baking sheets.

Cream butter and sugars. Add egg and extracts.

Mix dry ingredients separately, then combine. Fold in ground pistachios.

Roll into balls, press tops with pistachios, and flatten.

Bake 10–12 minutes until lightly golden. Cool.

Drizzle with melted chocolate. Sprinkle sea salt if desired.
