Instructions
1. Cook the Sausage
- Heat a large skillet over medium heat.
- Add the breakfast sausage and break it apart with a spatula as it cooks.
- Stir occasionally and cook until the sausage is browned and fully cooked through (about 8-10 minutes).
- If the sausage is very greasy, drain off some (but not all) of the excess fat—keeping about 2 tablespoons in the pan for flavor.
2. Make the Roux
- Sprinkle flour evenly over the cooked sausage.
- Stir well to coat the sausage in flour and let it cook for 1-2 minutes, stirring constantly. This helps get rid of the raw flour taste.
3. Add the Milk
- Slowly pour in the milk, stirring constantly to prevent lumps from forming.
- Continue stirring as the mixture starts to thicken (about 5-7 minutes).
- If the gravy gets too thick, add a little more milk, ¼ cup at a time, until it reaches your desired consistency.
4. Season to Perfection
- Add salt, black pepper, garlic powder, onion powder, and red pepper flakes (if using).
- Stir well and let the gravy simmer for another 2-3 minutes, allowing the flavors to meld.
- If desired, stir in 1 tablespoon of butter for a silkier texture.
5. Serve Over Biscuits
- Split open warm biscuits and spoon generous amounts of gravy over the top.
- Garnish with additional black pepper and serve hot!
