  • 2 hoagie rolls, split and lightly toasted

Instructions

Step 1: Prepare the Steak

  1. If using ribeye or sirloin, place it in the freezer for 20 minutes to firm up (this makes slicing easier).
  2. Slice the steak as thinly as possible, cutting against the grain for tenderness.
  3. Season with salt, pepper, paprika, and garlic powder, then set aside.

Step 2: Sauté the Peppers & Onions

  1. Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  2. Add the sliced onions and bell peppers and sauté for 4-5 minutes, until softened and slightly caramelized.
  3. Add garlic, stir for 30 seconds, then remove the mixture from the pan and set aside.

Step 3: Cook the Steak

  1. In the same skillet, melt 1 tbsp butter over high heat.
  2. Add the thinly sliced steak, spreading it out in an even layer.
  3. Let it sear for 1-2 minutes, then stir and cook for another 2-3 minutes, until browned and cooked through.
  4. Stir in Worcestershire sauce for extra flavor.

Step 4: Melt the Cheese

  1. Reduce heat to low, then return the cooked peppers and onions to the pan.
  2. Stir everything together, then top with provolone slices and let them melt over the steak.

Step 5: Assemble the Sandwiches

  1. Lightly toast the hoagie rolls with a little butter.
