If you’re a peanut butter lover, these Peanut Butter Cookie Dough Bars are the ultimate treat! They’re rich, fudgy, packed with peanut butter flavor, and completely safe to eat raw—no eggs, no baking, just pure deliciousness.

Ingredients

For the Dough:

  • 1 ½ cups peanut butter (creamy or chunky)
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • 1 ½ cups heat-treated all-purpose flour (see step below for safety!)
  • ½ tsp salt
  • ¾ cup mini chocolate chips

For the Topping (Optional but Delicious!):

  • ½ cup peanut butter chips or chocolate chips
  • 1 tbsp peanut butter (for smoothness)

Instructions

Step 1: Heat-Treat the Flour (For Safety!)

  1. Spread flour on a baking sheet and bake at 350°F (175°C) for 5 minutes.
  2. Let it cool completely before using.

(This step kills any bacteria in raw flour, making it safe to eat!)


Step 2: Make the Peanut Butter Dough

  1. In a mixing bowl, combine peanut butter, melted butter, brown sugar, and vanilla extract. Mix until smooth.
  2. Add in heat-treated flour and salt, stirring until fully incorporated.
  3. Fold in mini chocolate chips for extra goodness.

Step 3: Shape & Chill the Bars

  1. Line an 8×8-inch baking dish with parchment paper.
  2. Press the cookie dough mixture evenly into the dish.
  3. Chill in the refrigerator for 30 minutes to firm up.

Step 4: Add the Topping (Optional but Amazing!)

  1. Melt peanut butter chips (or chocolate chips) with 1 tbsp peanut butter in the microwave in 30-second intervals, stirring until smooth.
  2. Spread over the top of the chilled dough.
  3. Sprinkle with extra chocolate chips for decoration.

Step 5: Slice & Enjoy!

  • Chill for an additional 10 minutes to set.
  • Slice into bars or squares and serve!
