Ingredients
- 1 pound ground beef
- 1 small onion, diced
- Salt & pepper, to taste
- 2 tablespoons taco seasoning
- 1 teaspoon garlic powder
- 1 cup long grain white rice
- 1 ½ cups beef broth
- 1 (15-ounce) can corn, drained
- 8 ounces tomato sauce
- ½ cup salsa
- 1 cup shredded cheese
Instructions
- In a large skillet, cook the ground beef and diced onion over medium-high heat, seasoning with salt and pepper to taste. Stir occasionally until the beef is browned and fully cooked. Drain any excess grease if necessary.
- Return the skillet to the stove and sprinkle the beef with garlic powder and taco seasoning. Stir to combine and evenly coat the meat with the spices.
- Add the rice, beef broth, drained corn, tomato sauce, and salsa to the skillet. Stir well to mix everything together. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is tender and fully cooked.
- Remove the lid and top the casserole with shredded cheese. Replace the lid and allow the cheese to melt, about 2-3 minutes.
- Serve hot, and feel free to garnish with your favorite toppings like sour cream, cilantro, or avocado.
