Ingredients

  • Salt & pepper, to taste
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic powder
  • 1 cup long grain white rice
  • 1 ½ cups beef broth
  • 1 (15-ounce) can corn, drained
  • 8 ounces tomato sauce
  • ½ cup salsa
  • 1 cup shredded cheese

Instructions

  1. In a large skillet, cook the ground beef and diced onion over medium-high heat, seasoning with salt and pepper to taste. Stir occasionally until the beef is browned and fully cooked. Drain any excess grease if necessary.
  2. Return the skillet to the stove and sprinkle the beef with garlic powder and taco seasoning. Stir to combine and evenly coat the meat with the spices.
  3. Add the rice, beef broth, drained corn, tomato sauce, and salsa to the skillet. Stir well to mix everything together. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is tender and fully cooked.
  5. Remove the lid and top the casserole with shredded cheese. Replace the lid and allow the cheese to melt, about 2-3 minutes.
