Ingredients
For the One-Pot Burrito Bowl:
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts (diced)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup uncooked white or brown rice
- 1 ½ cups chicken broth
- 1 (15-ounce) can black beans (drained and rinsed)
- 1 (15-ounce) can diced tomatoes with green chilies
- 1 cup frozen or canned corn
- 1 cup shredded cheddar or Mexican cheese blend
- Juice of 1 lime
- ¼ cup fresh chopped cilantro (for garnish)
Optional Toppings:
- Sliced avocado or guacamole
- Sour cream or Greek yogurt
- Diced jalapeños
- Chopped red onion
- Hot sauce or salsa
- Crushed tortilla chips for crunch
Instructions
Step 1: Sauté the Chicken
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add diced chicken, season with salt, pepper, chili powder, cumin, paprika, garlic powder, and onion powder, and cook for 5-6 minutes until browned.
- Remove the chicken from the pot and set aside.
Step 2: Cook the Rice & Vegetables
- In the same pot, add the rice, stirring to coat it in the seasonings.
- Pour in chicken broth, diced tomatoes (with juices), black beans, and corn.
- Stir everything together, scraping up any bits from the bottom of the pan for extra flavor.
Step 3: Simmer Until Rice is Tender
- Bring the mixture to a boil, then reduce heat to low.
- Cover and let it simmer for 18-20 minutes until the rice is fully cooked and most of the liquid is absorbed.
Step 4: Melt the Cheese & Serve
- Stir the cooked chicken back into the pot.
- Sprinkle the shredded cheese over the top and cover the pot for 2-3 minutes until the cheese melts.
- Finish with fresh lime juice and chopped cilantro.
Step 5: Add Your Favorite Toppings
- Spoon into bowls and add toppings like guacamole, sour cream, diced jalapeños, or hot sauce.
- Serve hot and enjoy!
