When it comes to party appetizers, there’s just something magical about the timeless flavors of a Reuben sandwich. Tangy sauerkraut, savory corned beef, and melted Swiss cheese – it’s a classic combination that just works. Whether you’re hosting friends or just in the mood for a cozy snack, these bites are easy to make and even easier to love.

Ingredients

  • 1 package cocktail rye bread

  • 1/2 lb corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 8 oz Swiss cheese, sliced

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Assemble the Bites: Place the cocktail rye bread slices on the prepared baking sheet. Spread a thin layer of Thousand Island dressing on each slice. Add a small piece of corned beef to each slice, followed by a spoonful of drained sauerkraut. Top each bite with a small piece of Swiss cheese.
  3. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
