Ingredients
For the Tart Crust:
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ cup powdered sugar
- 1 egg yolk
- 2 tablespoons ice water
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
For the Peach Topping:
- 2 fresh peaches, thinly sliced
- 2 tablespoons honey or maple syrup
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
Instructions
Step 1: Prepare the Tart Crust
- In a food processor, pulse flour, butter, and powdered sugar until crumbly.
- Add egg yolk and ice water, pulsing until dough forms.
- Wrap dough in plastic and chill for 30 minutes.
Step 2: Make the Cream Cheese Filling
- In a bowl, whisk together cream cheese, sugar, and vanilla extract until smooth.
- Set aside in the refrigerator.
Step 3: Prepare the Peaches
- In a bowl, toss peach slices with honey, cinnamon, and vanilla extract.
- Let sit for 10 minutes to release juices.
Step 4: Assemble the Tarts
- Preheat oven to 375°F (190°C).
- Roll out chilled dough and press into mini tart pans.
- Spoon cream cheese filling into each tart.
- Arrange peach slices on top in a fan pattern.
Step 5: Bake & Serve
- Bake for 18–22 minutes, until golden brown and set.
- Cool for 10 minutes, then drizzle with extra honey or powdered sugar.
- Serve warm or chilled.
