Mini Baked Parmesan Potato Rounds

These crispy, cheesy potato rounds are the perfect side dish or snack! With golden edges, a soft center, and a flavorful Parmesan crust, they’re an easy, crowd-pleasing treat.

Ingredients

  • 45 small Yukon gold potatoes, sliced into ½-inch rounds
  • 3 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt & black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

 

Instructions

Step 1: Prep the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the potatoes into ½-inch thick rounds.

Step 2: Coat with Seasoning

  1. In a large bowl, toss the potato rounds with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  2. Sprinkle the grated Parmesan cheese evenly over the rounds, pressing slightly to help it stick.

Step 3: Bake to Perfection

  1. Arrange the potatoes flat side down on a lined baking sheet.
  2. Bake for 25-30 minutes or until the bottoms are golden brown and crispy.
  3. Flip the potatoes and bake for another 5-10 minutes until crispy on both sides.

Step 4: Garnish & Serve

  1. Remove from the oven and sprinkle with fresh parsley.
  2. Serve immediately with your favorite dips like ranch, sour cream, or garlic aioli!
