Ingredients
For the Chicken:
- 2 large chicken breasts, cut into bite-sized pieces
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper

- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional, for spice)
- 1 cup chicken broth
- 1 ½ cups heavy cream (or half & half)
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach, chopped
- 12 oz penne pasta (or your favorite pasta)
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- 1 tablespoon butter (for extra richness)
For Garnish:
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh basil or parsley, chopped
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook penne pasta according to package instructions (al dente).
- Drain and set aside.
2. Cook the Chicken
- Season chicken with Italian seasoning, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and sear for 5-7 minutes, until golden brown and fully cooked.
- Remove from the pan and set aside.
3. Make the Creamy Sauce
- In the same skillet, add garlic and red pepper flakes, cooking for 30 seconds.
- Pour in chicken broth, scraping up any browned bits from the pan.
- Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes.
- Simmer for 2-3 minutes, stirring until thick and creamy.
4. Combine Everything
- Add chopped spinach and stir until slightly wilted.
- Toss in the cooked pasta and chicken, stirring to coat in the creamy sauce.
- Melt in butter for extra richness.
- Season with extra salt & pepper, if needed.
5. Garnish & Serve
- Sprinkle with grated Parmesan cheese and fresh basil.
