This easy, creamy chicken pasta will have everyone asking for seconds!

Ingredients

For the Chicken:

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

For the Sauce & Pasta:

  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional, for spice)
  • 1 cup chicken broth
  • 1 ½ cups heavy cream (or half & half)
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach, chopped
  • 12 oz penne pasta (or your favorite pasta)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon butter (for extra richness)

For Garnish:

  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook penne pasta according to package instructions (al dente).
  • Drain and set aside.

2. Cook the Chicken

  • Season chicken with Italian seasoning, paprika, salt, and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and sear for 5-7 minutes, until golden brown and fully cooked.
  • Remove from the pan and set aside.

3. Make the Creamy Sauce

  • In the same skillet, add garlic and red pepper flakes, cooking for 30 seconds.
  • Pour in chicken broth, scraping up any browned bits from the pan.
  • Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes.
  • Simmer for 2-3 minutes, stirring until thick and creamy.

4. Combine Everything

  • Add chopped spinach and stir until slightly wilted.
  • Toss in the cooked pasta and chicken, stirring to coat in the creamy sauce.
  • Melt in butter for extra richness.
  • Season with extra salt & pepper, if needed.

5. Garnish & Serve

  • Sprinkle with grated Parmesan cheese and fresh basil.
