Cloud bread is a light, airy, and fluffy bread substitute made primarily from eggs, cream cheese, and a stabilizer like cream of tartar or baking powder. It’s incredibly low in carbs and completely grain- and gluten-free.

Ingredients

Basic Ingredients:

  • 3 large eggs (separated) 🥚
  • 3 oz cream cheese, softened 🧀
  • ¼ tsp cream of tartar (or ½ tsp baking powder)

Optional Add-Ins for Flavor:

  • ½ tsp salt 🧂
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • 1 tbsp grated Parmesan 🧀
  • 1 tsp keto-friendly sweetener (like erythritol or monk fruit)
  • Dash of cinnamon for a sweet version

Instructions

🥚 Step 1: Separate the Eggs

  • Preheat oven to 300°F (150°C)
  • Line a baking sheet with parchment or grease it lightly
  • Separate whites and yolks into two bowls

🌀 Step 2: Whip the Egg Whites

  • Add cream of tartar to the egg whites
  • Beat on high speed with a hand or stand mixer until stiff peaks form — this is essential for fluffy texture!

🧀 Step 3: Mix Yolks with Cream Cheese

  • In the other bowl, mix egg yolks with softened cream cheese until smooth
  • Add in your seasonings or sweeteners here if desired

🍥 Step 4: Fold Gently

  • Carefully fold yolk mixture into egg whites using a spatula
  • DO NOT overmix — you want to maintain the airy texture

🔥 Step 5: Shape and Bake

  • Spoon batter into rounds on prepared baking sheet
  • Think of forming “buns” or “pita” sized rounds
  • Bake for 25–30 minutes, or until lightly golden on top
  • Let cool completely — they firm up as they cool

Notes

🧠 Tips for Success

  • ✅ Use Room-Temperature Ingredients – Helps egg whites whip better
  • ✅ Don’t Skip the Cream of Tartar – Stabilizes the egg whites
  • ✅ Whip Until Stiff Peaks – Essential for that cloud-like texture
  • ✅ Fold, Don’t Stir – Gentle folding keeps the air in
  • ✅ Cool Completely Before Using – They hold together better once cool
