Ingredients

  • For the cookies:
  • 1 box white cake mix
  • 2 eggs, whisked
  • 1/3 cup butter, melted
  • For the glaze:
  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1 tbsp water
  • 1 tsp vanilla

Instructions

  1. Preparing the cookies:

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large bowl, combine the cake mix, whisked eggs, and melted butter. Mix until the dough is thoroughly incorporated. Note that the dough will be thick.
  • Using a medium-sized cookie scoop or a heaping tablespoon, scoop the dough onto a parchment-lined cookie sheet.
  • Bake the cookies for 7-8 minutes. Remove from the oven and allow them to cool on the cookie sheet for 4-5 minutes before transferring them to a cooling rack. Repeat this process until all the dough has been used.

  1. Making the glaze:

  • Combine the butter, granulated sugar, water, and vanilla in a small saucepan.
  • Cook over medium-low heat, whisking continuously, until the sugar is completely dissolved (about 4 minutes).
  • Spoon a teaspoon of the glaze over each cookie, spreading it out if necessary.

  1. Finishing touches:

  • Allow the glaze to set, then sprinkle the cookies with powdered sugar.
  • Store your Kentucky Butter Cake Cookies in an airtight container at room temperature for up to 3 days.
