Ingredients
- For the cookies:
- 1 box white cake mix
- 2 eggs, whisked
- 1/3 cup butter, melted
- For the glaze:
- 1/4 cup butter
- 1/2 cup granulated sugar
- 1 tbsp water
- 1 tsp vanilla
Instructions
- Preparing the cookies:
- Preheat your oven to 350 degrees Fahrenheit.
- In a large bowl, combine the cake mix, whisked eggs, and melted butter. Mix until the dough is thoroughly incorporated. Note that the dough will be thick.
- Using a medium-sized cookie scoop or a heaping tablespoon, scoop the dough onto a parchment-lined cookie sheet.
- Bake the cookies for 7-8 minutes. Remove from the oven and allow them to cool on the cookie sheet for 4-5 minutes before transferring them to a cooling rack. Repeat this process until all the dough has been used.
- Making the glaze:
- Combine the butter, granulated sugar, water, and vanilla in a small saucepan.
- Cook over medium-low heat, whisking continuously, until the sugar is completely dissolved (about 4 minutes).
- Spoon a teaspoon of the glaze over each cookie, spreading it out if necessary.
- Finishing touches:
- Allow the glaze to set, then sprinkle the cookies with powdered sugar.
- Store your Kentucky Butter Cake Cookies in an airtight container at room temperature for up to 3 days.
