Ingredients
Meatloaf:

2 lbs ground beef (85/15)

½ cup panko bread crumbs

½ medium red onion, grated

2 cloves garlic, minced

2 eggs, lightly beaten

2 tbsp Jack Daniels whiskey
-
2 tbsp Hey Grill Hey Beef Rub (or favorite beef rub)

1 tbsp Worcestershire sauce
-
¼ cup milk
-
6 oz pepper jack cheese, cut into strips
Sauce:
-
½ cup ketchup
-
⅓ cup brown sugar
-
¼ cup Jack Daniels whiskey
-
2 tsp crushed red pepper flakes
Instructions

Preheat smoker to 225°F with hickory or oak wood.

In a large bowl, combine all meatloaf ingredients. Mix gently.

Spread half of the meat into a grill basket. Layer in cheese. Top with remaining meat and seal edges.

Mix sauce ingredients and pour over the meatloaf.

Smoke for 4 hours, or until internal temp reaches 165°F.

Rest for 5–10 minutes. Slice and serve.
