Jack’d Up Smoked Meatloaf

Ingredients

Meatloaf:

  • 2 lbs ground beef (85/15)

  • ½ cup panko bread crumbs

  • ½ medium red onion, grated

  • 2 cloves garlic, minced

  • 2 eggs, lightly beaten

  • 2 tbsp Jack Daniels whiskey

  • 2 tbsp Hey Grill Hey Beef Rub (or favorite beef rub)

  • 1 tbsp Worcestershire sauce

  • ¼ cup milk

  • 6 oz pepper jack cheese, cut into strips


Sauce:

  • ½ cup ketchup

  • ⅓ cup brown sugar

  • ¼ cup Jack Daniels whiskey

  • 2 tsp crushed red pepper flakes

Instructions

  1. Preheat smoker to 225°F with hickory or oak wood.

  2. In a large bowl, combine all meatloaf ingredients. Mix gently.

  3. Spread half of the meat into a grill basket. Layer in cheese. Top with remaining meat and seal edges.

  4. Mix sauce ingredients and pour over the meatloaf.

  5. Smoke for 4 hours, or until internal temp reaches 165°F.

  6. Rest for 5–10 minutes. Slice and serve.
