Ingredients

For the Sandwich:

  • 2 boneless, skinless chicken breasts (grilled or pan-seared)
  • 4 slices of ciabatta or sourdough bread (or any crusty bread of choice)
  • 4 slices of mozzarella or provolone cheese
  • 1 large tomato, sliced
  • 1/4 cup fresh basil leaves
  • 1/4 cup roasted red peppers, sliced (optional)

For the Garlic Herb Spread:

  • 2 tablespoons mayonnaise
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional for spice)
  • Salt and black pepper to taste


Instructions

Step 1: Prepare the Chicken

  • Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
  • Grill or pan-sear over medium heat for 5–6 minutes per side, until fully cooked.
  • Let the chicken rest for a few minutes, then slice it thinly.

Step 2: Make the Garlic Herb Spread

  • In a small bowl, mix mayonnaise, garlic, oregano, red pepper flakes, salt, and black pepper.
  • Spread this mixture on one side of each slice of bread.

Step 3: Assemble the Panini

  • Place a slice of cheese on the bottom slice of bread.
  • Layer with grilled chicken, tomato slices, roasted red peppers, and fresh basil.
  • Top with another slice of cheese and the second piece of bread.

Step 4: Grill to Perfection

  • Heat a panini press or grill pan over medium heat.
  • Brush the outside of the bread with olive oil for a crispy crust.
  • Grill for 3–4 minutes per side until the bread is golden brown and crispy and the cheese is melted.
