Ingredients
For the Sandwich:
- 2 boneless, skinless chicken breasts (grilled or pan-seared)
- 4 slices of ciabatta or sourdough bread (or any crusty bread of choice)
- 4 slices of mozzarella or provolone cheese
- 1 large tomato, sliced
- 1/4 cup fresh basil leaves
- 1/4 cup roasted red peppers, sliced (optional)
- 1 tablespoon olive oil (for brushing)
For the Garlic Herb Spread:
- 2 tablespoons mayonnaise
- 1 teaspoon minced garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional for spice)
- Salt and black pepper to taste
Instructions
Step 1: Prepare the Chicken
- Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
- Grill or pan-sear over medium heat for 5–6 minutes per side, until fully cooked.
- Let the chicken rest for a few minutes, then slice it thinly.
Step 2: Make the Garlic Herb Spread
- In a small bowl, mix mayonnaise, garlic, oregano, red pepper flakes, salt, and black pepper.
- Spread this mixture on one side of each slice of bread.
Step 3: Assemble the Panini
- Place a slice of cheese on the bottom slice of bread.
- Layer with grilled chicken, tomato slices, roasted red peppers, and fresh basil.
- Top with another slice of cheese and the second piece of bread.
Step 4: Grill to Perfection
- Heat a panini press or grill pan over medium heat.
- Brush the outside of the bread with olive oil for a crispy crust.
- Grill for 3–4 minutes per side until the bread is golden brown and crispy and the cheese is melted.
Step 5: Serve & Enjoy
- Slice the panini in half and serve warm with a side of marinara sauce, balsamic glaze, or pesto for dipping.
