Ingredients
For the Cake:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup all-purpose flour
- ½ cup almond flour (or finely ground almonds)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup whole milk

- 2 tablespoons powdered sugar (for dusting)

Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan and line it with parchment paper.
Step 2: Mix the Wet Ingredients
- In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 3 minutes).
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla and almond extracts.
Step 3: Combine the Dry Ingredients
- In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk.
- Mix just until combined—don’t overmix!
Step 4: Bake the Cake
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle sliced almonds over the batter for a lovely toasted topping.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Step 5: Cool and Add the Finishing Touches
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
- If using a glaze, warm apricot jam or honey slightly and brush it over the top for a shiny finish.
- Dust with powdered sugar before serving.
