Ingredients

1½ cups dry Italian breadcrumbs

1⅓ cups grated Parmesan cheese, divided

1 tsp salt

2 (16 oz) packages mozzarella sticks

4 large eggs, beaten

1½ cups vegetable oil (for frying)
Instructions

In a medium bowl, mix breadcrumbs, 1 cup Parmesan, and salt.

Cut mozzarella sticks in half.

Dip each stick in beaten eggs, then into breadcrumb mixture. Repeat both steps to double coat.

Place coated sticks on a baking sheet, cover, and freeze for at least 2 hours (or up to 3 months).

Heat oil in a skillet over medium heat. Fry cheese sticks in batches, about 1 minute per side, until golden brown.

Transfer to paper towels to drain. Sprinkle with remaining Parmesan and serve immediately.
