Ingredients

Whisk egg yolks, water, and lemon juice in a heatproof bowl until well combined.

Place bowl over a pot of gently simmering water (double boiler method). Do not let the bowl touch the water.

Slowly drizzle in melted butter while whisking vigorously. Continue whisking 5β7 minutes until sauce thickens.

Remove from heat. Season with salt, pepper, and optional cayenne or hot sauce.

Serve immediately over eggs, veggies, or fish, or keep warm in a bowl of warm water.
