Guinness Beef Sliders

Ingredients

For the beef patties:

  • 1 lb ground beef (80/20 blend for juiciness)
  • ¼ cup Guinness stout (plus extra for basting)
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

For the caramelized onions:

  • 1 large onion, thinly sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • ¼ cup Guinness stout
  • Pinch of salt

Instructions

1. Prepare the Caramelized Onions

  • In a skillet over medium heat, melt butter with olive oil.
  • Add sliced onions and a pinch of salt, stirring occasionally.
  • Cook for about 10 minutes, then add brown sugar and Guinness stout.
  • Continue to cook for another 10-15 minutes until the onions are golden and sticky.
  • Remove from heat and set aside.

2. Make the Guinness-Infused Beef Patties

  • In a mixing bowl, combine ground beef, Guinness stout, Worcestershire sauce, salt, pepper, garlic powder, and onion powder.
  • Gently mix (don’t overwork the meat to keep the patties tender).
  • Divide the mixture into 6 small patties (slightly larger than the buns since they’ll shrink when cooking).
  • Place the patties on a tray, cover, and let them rest in the fridge for 15-20 minutes to firm up.

3. Cook the Patties

  • Heat a cast iron skillet or grill pan over medium-high heat.
  • Cook the patties for 3-4 minutes per side, basting with extra Guinness to intensify the flavor.
  • Add cheese slices in the last minute of cooking and cover with a lid to melt.

4. Toast the Buns

  • In the same pan, melt butter and lightly toast the slider buns until golden brown.

5. Assemble the Sliders

  • Spread a thin layer of Dijon mustard and mayonnaise on the bottom bun.
  • Place the Guinness-infused beef patty on top.
  • Add a generous spoonful of caramelized onions.
  • Top with the bun and serve immediately.
