Ingredients
- 🥬 1 head romaine lettuce, chopped
- 🍅 1 cup cherry tomatoes, halved
- 🥑 1 avocado, sliced
- 🧀 1 cup cottage cheese (or feta)
- 🫒 2 tbsp extra virgin olive oil
- 🍋 1 tbsp lemon juice
- 🧂 Salt & pepper to taste
- 🌿 Optional herbs (parsley or oregano)
- 🧄 Optional 1 garlic clove, minced
Instructions
- Wash and prep all veggies.
- Whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Assemble salad in a large bowl.
- Top with cottage cheese and drizzle with dressing.
