Cool, creamy, and irresistibly minty, Grasshopper Pie is a classic no-bake dessert that brings together the vibrant flavor of crème de menthe with a luscious whipped filling and a crunchy chocolate crust. Ingredients

Chocolate Crust:

  • 1 ½ cups chocolate cookie crumbs (like Oreos or chocolate graham crackers)
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

Filling:

  • 1 cup heavy whipping cream
  • 1 cup mini marshmallows
  • ¼ cup crème de menthe liqueur
  • 2 tbsp crème de cacao (optional, for deeper chocolate flavor)
  • 4 oz cream cheese, softened
  • Green food coloring (optional, for extra color)

Garnish:

  • Chocolate shavings or curls
  • Whipped cream (optional)
  • Mint leaves (optional)

 

 


Instructions

1. Prepare the Crust

  • Mix cookie crumbs, sugar, and melted butter until combined.
  • Press into a 9-inch pie pan.
  • Chill in the fridge for at least 30 minutes.

2. Make the Mint Filling

  • In a saucepan, heat the marshmallows over low heat until melted, stirring constantly.
  • Remove from heat and stir in crème de menthe and crème de cacao.
  • Let cool to room temperature.
  • Beat softened cream cheese until smooth, then add the cooled marshmallow mixture and mix until fully combined.

3. Fold in Whipped Cream

  • Whip the heavy cream until soft peaks form.
  • Fold the whipped cream gently into the mint mixture until smooth and fluffy.
  • Add green food coloring if desired.

4. Chill and Garnish

  • Pour filling into chilled crust and smooth the top.
  • Chill for at least 4 hours or overnight until firm.
  • Garnish with chocolate shavings and extra whipped cream before serving.
