Ingredients
Chocolate Crust:
- 1 ½ cups chocolate cookie crumbs (like Oreos or chocolate graham crackers)
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
Filling:
- 1 cup heavy whipping cream
- 1 cup mini marshmallows
- ¼ cup crème de menthe liqueur
- 2 tbsp crème de cacao (optional, for deeper chocolate flavor)
- 4 oz cream cheese, softened
- Green food coloring (optional, for extra color)

Instructions
1. Prepare the Crust
- Mix cookie crumbs, sugar, and melted butter until combined.
- Press into a 9-inch pie pan.
- Chill in the fridge for at least 30 minutes.
2. Make the Mint Filling
- In a saucepan, heat the marshmallows over low heat until melted, stirring constantly.
- Remove from heat and stir in crème de menthe and crème de cacao.
- Let cool to room temperature.
- Beat softened cream cheese until smooth, then add the cooled marshmallow mixture and mix until fully combined.
3. Fold in Whipped Cream
- Whip the heavy cream until soft peaks form.
- Fold the whipped cream gently into the mint mixture until smooth and fluffy.
- Add green food coloring if desired.
4. Chill and Garnish
- Pour filling into chilled crust and smooth the top.
- Chill for at least 4 hours or overnight until firm.
- Garnish with chocolate shavings and extra whipped cream before serving.
