Ingredients

For the Chicken Salad:

  • 2 cups cooked chicken, shredded or diced (poached or roasted)

  • 1 teaspoon whole-grain mustard (adds a little bite)
  • 1/2 lemon, juiced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/3 cup celery, finely diced (adds crunch)
  • 1/3 cup green onions, chopped
  • 1/4 cup toasted almonds or walnuts, chopped
  • 1/4 cup pickles or capers, chopped (optional, for tanginess)
  • 1 tablespoon fresh parsley or tarragon, chopped

For the Sandwich:

  • 4 slices of sourdough or ciabatta bread
  • 2 tablespoons unsalted butter (for grilling)
  • Handful of fresh arugula or mixed greens


Instructions

Step 1: Prepare the Chicken

  • If using raw chicken, poach it in simmering water with a bay leaf and salt for 15 minutes, or roast it at 375°F (190°C) for 20 minutes until fully cooked.
  • Let it cool slightly, then shred or dice it into bite-sized pieces.

Step 2: Make the Chicken Salad Mixture

  • In a bowl, mix mayonnaise, Dijon mustard, whole-grain mustard, lemon juice, salt, and black pepper until well combined.
  • Add the chicken, celery, green onions, nuts, pickles/capers (if using), and parsley/tarragon.
  • Stir gently until everything is coated. Taste and adjust seasoning as needed.

Step 3: Toast the Bread

  • Heat a grill pan or skillet over medium heat.
  • Spread butter on one side of each bread slice and place it on the grill, butter side down.
  • Toast for 1–2 minutes per side until golden brown and slightly crispy.

Step 4: Assemble the Sandwich

  • Place a handful of fresh arugula or mixed greens on one slice of toasted bread.
  • Generously spoon the chicken salad mixture on top.
  • Place the second slice of toasted bread on top and gently press down.
  • Slice diagonally and serve immediately.
