Ingredients
For the Sourdough Crumpets:
- 1 cup (250g) sourdough starter (discard or active)
- ½ cup (120ml) warm milk or water
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon baking soda
Optional Additions:
- 1 tablespoon melted butter (for extra richness)
- ½ teaspoon vanilla extract (for a hint of sweetness)

- Butter or oil (for greasing the pan)
Instructions
1. Prepare the Batter
- In a mixing bowl, combine the sourdough starter, warm milk, sugar, and salt. Stir until well combined.
- Sprinkle in the baking soda and gently mix. The batter will become light and bubbly—this is what creates the crumpet’s signature texture!
2. Heat the Pan & Grease the Rings
- Preheat a non-stick pan or griddle over medium-low heat.
- Lightly grease the pan and metal crumpet rings or cookie cutters with butter or oil. (If you don’t have rings, the batter will spread like pancakes but still be delicious!)
3. Cook the Crumpets
- Pour ¼ cup of batter into each ring and cook for 5-7 minutes on low heat, until bubbles form on the surface and the tops appear set.
- Remove the rings and flip the crumpets to cook for another 1-2 minutes on the other side.
4. Serve & Enjoy!
- Remove from the pan and serve warm with butter, honey, jam, or maple syrup.
