Ingredients

For the Mac and Cheese:

  • 12 oz elbow macaroni (or cavatappi, shells, or penne)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp Dijon mustard (optional, for depth of flavor)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 2 cups white cheddar cheese, shredded
  • 1 cup Parmesan cheese, grated
  • ½ cup mozzarella cheese, shredded

For the Crispy Topping:

  • ½ cup panko breadcrumbs
  • 2 tbsp butter, melted
  • ¼ cup Parmesan cheese, grated
  • ½ tsp garlic powder

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook 1 minute less than package directions (it will finish cooking in the sauce).
  3. Drain and set aside.

Step 2: Make the Garlic Parmesan Cheese Sauce

  1. In a large saucepan, melt butter over medium heat.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in flour and cook for 1 minute, stirring constantly (this creates a roux).
  4. Slowly whisk in milk and heavy cream, stirring until smooth.
  5. Add Dijon mustard, salt, pepper, paprika, and garlic powder.
  6. Bring to a gentle simmer, then reduce heat to low.

Step 3: Add the Cheese

  1. Gradually stir in white cheddar, Parmesan, and mozzarella, one handful at a time.
  2. Stir until the cheese is fully melted and the sauce is smooth.

Step 4: Combine Pasta & Sauce

  1. Add the cooked pasta to the cheese sauce and stir until fully coated.
  2. If serving stovetop mac and cheese, serve immediately.

Step 5: Make the Crispy Topping & Bake (Optional)

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix panko breadcrumbs, melted butter, Parmesan, and garlic powder.
  3. Pour mac and cheese into a buttered baking dish and sprinkle the topping evenly over the top.
  4. Bake uncovered for 15-20 minutes, until the topping is golden brown and crispy.

Step 6: Serve & Enjoy!

  1. Garnish with chopped parsley or extra Parmesan.
