Ingredients
For the Salmon:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
For the Garlic Butter Parmesan Sauce:
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter option)
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional, for a little heat)
- 1 cup fresh spinach, chopped
- ¼ cup crispy bacon bits (optional, but delicious!)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
1. Sear the Salmon
- Pat the salmon fillets dry with a paper towel.
- Season both sides with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Place salmon fillets skin-side down and cook for 3-4 minutes per side until golden brown and crispy.
- Remove from the pan and set aside.
2. Make the Garlic Butter Sauce
- In the same pan, melt butter and add garlic, sautéing for about 30 seconds until fragrant.
- Pour in heavy cream, stirring well.
- Add Parmesan cheese, Italian seasoning, and red pepper flakes, whisking until smooth and creamy.
3. Add the Spinach & Bacon
- Stir in the chopped spinach and cook for 1-2 minutes until wilted.
- Add bacon bits, stirring to combine.
4. Return the Salmon to the Pan
- Nestle the salmon fillets back into the sauce, spooning some over the top.
- Simmer for 2-3 minutes until the salmon is heated through and the sauce thickens slightly.
5. Serve & Enjoy!
- Garnish with fresh parsley and extra Parmesan.
- Serve immediately over pasta, rice, mashed potatoes, or with crusty bread.
