Ingredients
- 3 Β½ cups Fruity Pebbles Cereal
- 3 cups mini marshmallows
- 2 tablespoons unsalted butter
- 16 oz cream cheese, softened
- ΒΌ cup powdered sugar
- 1 tsp vanilla extract
- 7 oz tub marshmallow creme
- 1 Β½ cup Fruity Pebbles cereal, lightly chopped
Instructions
- In a large microwave-safe bowl, combine the Fruity Pebbles, mini marshmallows, and unsalted butter. Microwave on high for 2-3 minutes, until the marshmallows begin to expand.
- Stir the mixture quickly until all the cereal is evenly coated in the melted marshmallows and butter. While still warm, spoon the mixture into taco shell molds or form small taco shapes by draping the mixture over a narrow rolling pin or the handle of a wooden spoon, suspended between two objects. Allow to cool and firm up, creating the cereal taco shells.
- For the filling, in a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Gently fold in the marshmallow creme, then mix in the lightly chopped cereal for texture.
- Carefully spoon or pipe the cheesecake filling into the cooled cereal taco shells. Chill in the refrigerator for at least 1 hour to firm up the filling.
- Optional: Garnish with extra Fruity Pebbles or festive sprinkles for an added pop of color and fun!
