Instructions

- Slice bananas into ¼-inch thick pieces. Arrange half of the slices on a parchment paper-lined baking sheet.
- Add the Peanut Butter:
- Warm the peanut butter in the microwave for 30 seconds to 1 minute until smooth and spreadable, stirring halfway through.
- Spoon a heaped ¼ teaspoon of peanut butter onto each banana slice on the baking sheet. Top with the remaining banana slices to form sandwiches. Freeze for 2 hours.
- Melt the Chocolate:
- In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals at low/medium heat, stirring between each burst until glossy and smooth.
- Coat the Banana Bites:
- Prepare another baking sheet with parchment paper. Dip the frozen banana sandwiches in the melted chocolate, ensuring they are fully coated. Use two forks for easy handling. Place each coated bite on the prepared sheet. Work in small batches to prevent the sandwiches from thawing. If the chocolate thickens, gently remelt as needed.
- Freeze and Store:
