    • Juice of ½ lemon

    • ½ teaspoon red pepper flakes (optional, for a little heat)

For the Mediterranean Topping:

    • ¼ cup Kalamata olives, sliced

    • ¼ cup cherry tomatoes, halved

    • ¼ cup crumbled feta cheese

    • 1 tablespoon chopped fresh parsley

    • 1 teaspoon lemon zest

For Garnish:

    • Lemon slices

Instructions

1. Preheat & Prep the Salmon

    • Preheat your oven to 400°F (200°C).

    • Pat the salmon fillets dry with a paper towel.

    • Place them on a lightly greased baking dish or sheet pan.

2. Season the Salmon

    • Rub this seasoning mixture evenly over the salmon fillets.

3. Add the Mediterranean Topping

    • Sprinkle the sliced olives, cherry tomatoes, crumbled feta, and lemon zest over the salmon.

    • Drizzle with a little extra olive oil for extra richness.

4. Bake the Salmon

    • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

    • If you like a crispy golden top, broil for the last 2 minutes.
