Fresh Apple Cake Recipe 🍎

A rustic, moist cake packed with fresh apples and pecans, topped with a rich caramel frosting — perfect for fall baking or year-round comfort.

Ingredients

Cake Ingredients:

  • 1 cup vegetable oil

  • 2 cups sugar

  • 3 eggs

  • 3 cups flour

  • 1 tsp baking soda

  • 2 tsp vanilla extract

  • 1 cup chopped pecans

  • 3 cups peeled and chopped apples


Frosting Ingredients:

  • ½ cup butter

  • 1 cup packed brown sugar

  • ¼ cup evaporated milk

  • ½ tsp vanilla


Instructions

  1. Preheat oven to 350°F. Grease a 9×13″ pan.

  2. In a large bowl, mix oil, sugar, and eggs. Stir in flour and baking soda.

  3. Add vanilla, pecans, and apples. Mix until fully combined.

  4. Pour batter into the pan. Bake for 45–50 minutes, until golden and a toothpick comes out clean.

  5. Cool completely (about 2 hours).

  6. For frosting: In a saucepan, boil butter, brown sugar, and evaporated milk for 2 minutes. Remove from heat and stir in vanilla.

  7. Place saucepan in ice water and beat until frosting thickens. Spread over cooled cake.

  8. Slice and enjoy!
