Ingredients:

For the Meatloaf:

  • 1 1/2 lbs ground meatloaf mix (equal parts beef, pork, veal)
  • 1 caramelized onion
  • 1 egg
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh thyme
  • 2 tbsp milk
  • 1 tbsp Worcestershire sauce
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Gruyere cheese
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt

For the Gravy:

  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 sweet onions, thinly sliced
  • 3 tbsp all-purpose flour
  • 2 cups beef stock
  • 2 tbsp Worcestershire sauce
  • 1 cup grated Gruyere cheese
  • 1 tbsp chopped parsley
  • Salt and pepper to taste

Instructions:

  1. Caramelize the Onions:
  • In a skillet, heat olive oil and butter over low heat. Add the thinly sliced sweet onions and cook for about 45 minutes, stirring occasionally until they are golden and caramelized. Set half of the onions aside for later use in the gravy.
  1. Prepare the Gravy:
  • In the same skillet with the remaining caramelized onions, stir in the flour and cook for 1-2 minutes until the mixture turns golden. Slowly whisk in the beef stock and Worcestershire sauce, cooking until the gravy thickens. Stir in the Gruyere cheese and parsley, allowing the cheese to melt into the gravy. Season with salt and pepper to taste.
  1. Prepare the Meatloaf:
  • Preheat the oven to 350°F (175°C). In a large bowl, combine the ground meatloaf mix, caramelized onion, egg, garlic, parsley, thyme, milk, Worcestershire sauce, breadcrumbs, Gruyere cheese, salt, and pepper. Mix everything together until just combined.
  • Shape the mixture into a loaf and place it on a parchment-lined baking sheet.
  1. Bake the Meatloaf:
  • Bake the meatloaf in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  1. Serve:
  • Once the meatloaf is fully cooked, remove it from the oven and let it rest for a few minutes before slicing. Serve warm with the prepared gravy spooned over the top.
