Fluffy Pancakes

There’s something profoundly comforting about starting the day with a stack of fluffy pancakes, each one golden and gently steaming, a promise of something delicious. Pancakes have a special place in the realm of breakfast foods, being both a canvas for a variety of toppings and a heartwarming treat to wake up to. Whether it’s a lazy Sunday morning or a bustling weekday where you want to treat yourself, making these fluffy pancakes can add a sparkle of joy to your routine.

Ingredients

  • 2 cups all-purpose flour
  • 4 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¾ cups milk
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • 1 large egg

Instructions

  1. Prepare the Batter: In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt. Create a well in the center of the dry ingredients and add in the milk, melted butter, vanilla extract, and egg.
  2. Mix to Combine: Whisk the ingredients together until the batter is mostly smooth; a few lumps are perfectly okay. If the batter is too thick for your preference, feel free to thin it out with a bit more milk until it reaches the desired consistency.
  3. Cook the Pancakes: Heat a nonstick pan or griddle over medium-low heat and lightly grease with butter. Pour about ¼ cup of batter onto the hot surface and gently smooth it into a round shape using the back of your measuring cup.
  4. Flip and Finish: Watch for bubbles to appear on the surface and for the edges to look set. Once golden underneath, flip the pancakes with a spatula and cook the other side until it is also golden and the pancake is cooked through.
  5. Serve and Enjoy: Serve your fluffy pancakes hot, topped with your choice of maple syrup, honey, or a beautiful assortment of fruits.
