How to Make Fluffy Cottage Cheese Cloud Bread

Step 1: Preheat Oven & Prep Baking Sheet

  • Preheat oven to 300°F (150°C).

  • Line a baking sheet with parchment paper or a silicone mat.


Step 2: Blend the Cottage Cheese Mixture

  • In a bowl, combine egg yolks, cottage cheese, and baking powder.

  • Blend until smooth and creamy.


Step 3: Whip the Egg Whites

  1. In a separate bowl, whip egg whites (and salt if using) with a mixer until stiff peaks form.

  2. The whites should stand straight when the beaters are lifted.


Step 4: Fold & Combine

  • Gently fold the whipped egg whites into the cottage cheese mixture in batches.

  • Be careful not to deflate the batter—fold until just combined.


Step 5: Shape and Bake
