Ingredients

For the Cheese Ball:

  • 16 oz (2 blocks) cream cheese, softened
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup finely chopped dill pickles
  • 1 tablespoon pickle juice (for extra tang)
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika (optional, for depth)

For the Crunchy Coating:

  • ½ cup finely chopped pecans or walnuts
  • ¼ cup panko breadcrumbs (lightly toasted)
  • 1 tablespoon finely chopped fresh dill
  • 1 teaspoon everything bagel seasoning (optional, for extra crunch)

For Serving:

  • Crackers (Ritz, Wheat Thins, or pretzel crisps)
  • Fresh veggie sticks (carrots, celery, cucumbers)
  • Pickle spears on the side for extra tang


Instructions

Step 1: Prepare the Cheese Mixture

  1. In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
  2. Add shredded cheddar, chopped dill pickles, pickle juice, fresh dill, garlic powder, onion powder, salt, black pepper, and smoked paprika.
  3. Mix well until all ingredients are fully incorporated.

Step 2: Shape the Cheese Ball

  1. Place a large piece of plastic wrap on a flat surface.
  2. Scoop the cheese mixture into the center and shape it into a ball using your hands.
  3. Wrap tightly in the plastic wrap and refrigerate for at least 2 hours (or overnight) to firm up.

Step 3: Prepare the Coating

  1. While the cheese ball chills, prepare the crunchy topping.
  2. In a small bowl, mix:

    • Chopped pecans or walnuts
    • Toasted panko breadcrumbs
    • Fresh dill
    • Everything bagel seasoning (optional)

  3. Spread the mixture onto a flat plate.

Step 4: Coat the Cheese Ball

  1. Remove the chilled cheese ball from the fridge.
  2. Unwrap it and roll it in the nut and breadcrumb mixture, pressing gently to coat all sides.
  3. Place on a serving plate and garnish with extra fresh dill.
