Ingredients
For the Mango Sago Dessert:
- ½ cup small tapioca pearls (sago)
- 2 ripe mangoes, diced (plus extra for topping)
- 1 cup coconut milk (or evaporated milk for a richer flavor)
- ½ cup sweetened condensed milk (or adjust for sweetness)
- ¼ cup water (or more for consistency)
- ½ teaspoon vanilla extract (optional, for extra depth)

Instructions
1. Cook the Sago Pearls
- Bring a pot of water to a boil, then add the small tapioca pearls (sago).
- Cook on medium heat for 10-12 minutes, stirring occasionally to prevent sticking.
- Once the pearls turn translucent, drain and rinse under cold water.
- Set aside in a bowl of cold water to prevent them from clumping.
2. Make the Mango Puree
- In a blender, combine 1½ mangoes (diced), coconut milk, sweetened condensed milk, and water.
- Blend until smooth and creamy.
- Adjust sweetness by adding more condensed milk if needed.
3. Combine Everything
- Drain the cooked sago pearls and add them to the mango mixture.
- Stir gently to combine.
- Refrigerate for at least 1 hour for the flavors to meld and for a chilled dessert.
4. Serve & Enjoy!
- Pour into serving bowls or glasses.
- Top with extra diced mango, fresh mint, and shredded coconut for a tropical touch!
