Easy Ground Beef and Peppers Skillet

Ingredients

  • 1 Onion, chopped

  • ½ Red bell pepper, chopped

  • ½ Green bell pepper, chopped

  • ½ Yellow bell pepper, chopped

  • 2 tsp Minced garlic

  • ½ tsp Dried oregano

  • ½ tsp Dried basil

  • Salt and pepper, to taste

  • 1 Can diced tomatoes

  • 2 Cups Beef broth

  • ⅔ Cup Rice

  • 1½ Cups Shredded cheddar cheese

Instructions

  1. In a large skillet over medium-high heat, add ground beef, onion, and bell peppers. Cook until the beef is browned and veggies are softened. Drain excess fat.

  2. Stir in minced garlic, oregano, basil, and salt and pepper to taste. Cook for 30 seconds more.

  3. Add diced tomatoes, beef broth, and rice. Stir to combine.

  4. Bring to a light boil, then reduce to a simmer. Cover and cook for 20 minutes.

  5. Sprinkle cheddar cheese on top, cover again, and cook until cheese is melted.

  6. Serve hot and enjoy!
