Ingredients
For the Salad:
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can chickpeas (garbanzo beans), drained and rinsed
- 1 cup fresh or canned green beans, trimmed and cut into 1-inch pieces
- ½ cup frozen peas (optional, adds extra sweetness)
- ¼ cup red onion, finely chopped
- 2 tablespoons fresh parsley, chopped (or cilantro for a twist)
- 2 tablespoons fresh basil, chopped (optional for extra flavor)
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar (or red wine vinegar)
- 1 tablespoon lemon juice (for freshness)
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or maple syrup (for a slight sweetness)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon red pepper flakes (optional for a little heat)
Instructions
Step 1: Prepare the Beans
- Drain and rinse the kidney beans and chickpeas under cold water.
- If using fresh green beans, blanch them in boiling water for 1-2 minutes, then drain and rinse under cold water to keep them crisp and vibrant.
- If using canned green beans, simply drain and rinse them.
- Add the frozen peas (if using) and let them thaw in the salad.
Step 2: Make the Dressing
- In a small bowl or jar, whisk together olive oil, apple cider vinegar, lemon juice, Dijon mustard, honey (or maple syrup), salt, pepper, garlic powder, and red pepper flakes.
- Mix well until the dressing is smooth and well combined.
Step 3: Assemble the Salad
- In a large bowl, combine the kidney beans, chickpeas, green beans, peas, red onion, parsley, and basil.
- Pour the dressing over the salad and toss gently to coat.
Step 4: Let the Flavors Meld (Optional)
- For the best flavor, let the salad sit for at least 30 minutes in the fridge.
- This allows the beans to absorb the dressing and develop a more intense flavor.
Step 5: Serve & Enjoy
- Serve chilled or at room temperature.
- Garnish with extra fresh herbs or a squeeze of lemon before serving.
