Spring is in the air, and with Easter just around the corner, it’s time to start thinking about festive treats to celebrate the season! While chocolate eggs and marshmallow chicks are Easter staples, there’s something special about homemade Easter Bunny Buns—adorable, fluffy, and slightly sweet bread rolls shaped like little bunnies.

Ingredients

For the Dough:

  • 3 cups all-purpose flour (plus extra for dusting)
  • ¼ cup granulated sugar
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • ½ teaspoon salt
  • ¾ cup warm milk (about 110°F)
  • ¼ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Egg Wash:

  • 1 egg yolk
  • 1 tablespoon milk

Optional Decorations:

  • Chocolate chips or raisins for eyes
  • Powdered sugar for a dusting of sweetness


Instructions

Step 1: Prepare the Dough

  1. In a small bowl, combine the warm milk and yeast. Let it sit for about 5 minutes until it becomes foamy. This step ensures the yeast is active.
  2. In a large mixing bowl (or a stand mixer with a dough hook), combine the flour, sugar, and salt.
  3. Add the butter, egg, vanilla extract, and yeast mixture. Mix until the dough comes together. Knead the dough for 8-10 minutes, until it becomes smooth and elastic. If it’s too sticky, add a tablespoon of flour at a time.
  4. Shape the dough into a ball, place it in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 2: Shape the Bunny Buns

Now comes the fun part—shaping the bunnies!

  1. Divide the dough into 12 equal pieces.
  2. For each bunny:

  • Roll one piece into a small ball (this will be the bunny’s body).
  • Take another small piece and roll it into an oval shape. Cut a slit in the center with a knife to create bunny ears.
  • Gently press the ears onto the body.
  • If using chocolate chips or raisins, press them in for eyes.

  1. Place the shaped bunnies on a lined baking sheet, leaving space between them to allow for rising.

Step 3: Second Rise

Cover the shaped bunny buns with a kitchen towel and let them rise for another 30 minutes.

Step 4: Bake the Bunnies

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the egg yolk and milk to make an egg wash. Brush this mixture lightly over the bunny buns for a golden-brown finish.
  3. Bake for 12-15 minutes, or until they’re golden brown.

Step 5: Cool & Decorate

  • Let the buns cool on a wire rack for a few minutes.
  • For a sweeter touch, dust with powdered sugar.
  • If desired, draw little noses or whiskers with melted chocolate or icing.
