- 4 cups shredded cooked chicken (rotisserie works great!)
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 can (10 oz) diced tomatoes with green chilies (drained)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon chili powder
- 2 cups crushed Nacho Cheese Doritos
- ½ cup chopped fresh cilantro (optional for garnish)
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish.
Step 2: Make the Creamy Mixture
- In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, drained diced tomatoes, garlic powder, onion powder, and chili powder.
- Stir in 1 cup of shredded cheese, mixing until well combined.
Step 3: Assemble the Casserole
- Spread half of the crushed Doritos evenly at the bottom of the prepared baking dish.
- Spoon the chicken mixture over the Doritos layer.
- Sprinkle the remaining 1 cup of cheese over the chicken mixture.
- Top with the remaining crushed Doritos for extra crunch.
Step 4: Bake & Serve
- Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let sit for 5 minutes before serving.
- Garnish with fresh cilantro, if desired.
