Ingredients

  • 1 ½ lbs beef steak (sirloin, ribeye, or chuck), cut into thick pieces
  • 2 tbsp olive oil or butter
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp cayenne pepper (optional for heat)

For the Brown Sugar Glaze:

  • ½ cup brown sugar
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tbsp apple cider vinegar (or lemon juice)

Instructions

Step 1: Season & Prepare the Beef Chops

  1. Pat the beef chops dry using a paper towel to remove excess moisture (this helps with searing).
  2. In a small bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  3. Rub the spice mixture evenly over all sides of the beef chops.

Step 2: Sear the Beef Chops

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Add the beef chops and sear for 3-4 minutes per side, until they form a golden-brown crust.
  3. Remove the beef from the skillet and set aside (they will finish cooking in the glaze).

Step 3: Make the Brown Sugar Glaze

  1. In the same skillet, reduce heat to medium-low and add butter and minced garlic. Cook for 30 seconds until fragrant.

Step 4: Coat the Beef & Finish Cooking

  1. Return the seared beef chops to the skillet.
  2. Spoon the brown sugar glaze over the beef and cook on low heat for 2-3 minutes, flipping occasionally, until the beef reaches your desired doneness (145°F for medium-rare, 160°F for medium).
  3. Remove from heat and let the beef rest for 5 minutes to lock in the juices.
