Ingredients
For the Cobbler:
- ¾ cup (170g) butter, softened
- ¾ cup (150g) sugar
- ½ cup (100g) brown sugar
- 1 ½ teaspoons vanilla extract
- 2 eggs
- 1 ½ cups (180g) all-purpose flour
- 1 ½ teaspoons baking powder
- ¾ teaspoon salt
- ¾ cup (130g) chocolate chips
- ⅓ cup (40g) pecans, optional
For the Sauce:
- ¼ cup (50g) sugar
- ½ cup (100g) brown sugar
- ¼ teaspoon salt
- 2 tablespoons cocoa powder
- 1 ¼ cups (300ml) boiling water
Instructions
- Preheat your oven to 350°F (175°C).
- In a stand mixer bowl, cream together the butter, sugar, and brown sugar until light and fluffy. Add in the eggs and vanilla, mixing until well combined.
- Gradually add the flour, baking powder, and salt, mixing until just combined. Fold in the chocolate chips and pecans (if using), and set aside.
- In a 9×9″ glass baking dish, combine the sugar, brown sugar, salt, and cocoa powder for the sauce. Pour the boiling water over the dry ingredients and stir until well mixed.
- Spoon the cookie dough evenly over the sauce layer.
- Bake for 35-45 minutes, or until the top is golden brown.
- Serve warm with a scoop of ice cream for an extra indulgent touch.
