Ingredients
- 2 chicken breasts, pounded thin 🍗
- 1 cup breadcrumbs or panko 🥖
- 1 egg, beaten 🥚
- Salt, pepper, paprika to season 🧂🌶️
- Olive oil for frying 🛢️
- 4 slices crusty bread or ciabatta 🥪
- 1 cup fresh arugula or spinach 🥬
Romesco Sauce:
- 1/2 cup roasted red peppers 🌶️
- 1/4 cup almonds or walnuts 🥜
- 1 clove garlic 🧄
- 2 tbsp olive oil 🫒
- 1 tbsp red wine vinegar 🍷
- Salt and pepper to taste 🧂
Instructions
Blend red peppers, almonds, garlic, oil, vinegar, salt, and pepper until smooth. Set aside.
Season chicken with salt, pepper, and paprika. Dip in egg, then breadcrumbs.
Heat oil in skillet. Fry chicken until golden and crispy on both sides (3-4 mins per side).
Lightly toast bread slices until golden.
Spread Romesco sauce on one slice, top with greens, crispy chicken, more sauce, and the second slice of bread.
Slice and enjoy immediately for peak crunch and flavor.
