Ingredients
For the Beef Tips & Gravy:
- 2 lbs beef stew meat (or sirloin tips, chuck roast, or rump roast, cut into cubes)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon dried thyme
- 1 tablespoon tomato paste (adds depth of flavor)
- 1 tablespoon Dijon mustard (optional, but adds richness)
- 1 tablespoon brown sugar (balances flavors)
- 2 tablespoons cornstarch + ¼ cup water (for thickening)
For Serving:
- 12 oz egg noodles
- 2 tablespoons butter (for coating noodles)
- Fresh parsley, chopped (for garnish)
Instructions
1. Prep the Ingredients
- Cut the beef into bite-sized cubes, if not already pre-cut.
- Dice the onion and mince the garlic.
2. Sear the Beef (Optional but Recommended)
While not necessary, searing the beef before slow cooking adds extra flavor.
- Heat 1 tablespoon of oil in a skillet over medium-high heat.
- Sear the beef cubes in batches for 1-2 minutes per side, just until browned.
- Transfer the beef to the slow cooker.
3. Add Everything to the Crockpot
- To the slow cooker, add:
- Beef broth
- Worcestershire sauce
- Soy sauce
- Salt, pepper, onion powder, paprika, and thyme
- Tomato paste, Dijon mustard, and brown sugar
- Diced onion and minced garlic
- Stir everything to combine.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until beef is fall-apart tender.
4. Thicken the Gravy
- About 30 minutes before serving, mix 2 tablespoons cornstarch with ¼ cup water to create a slurry.
- Stir the slurry into the slow cooker and let it cook for another 30 minutes to thicken.
5. Cook the Noodles
- Cook egg noodles according to the package instructions.
- Drain and toss with butter to keep them from sticking.
- Serve the beef tips and gravy over the warm noodles.
6. Serve & Enjoy!
- Ladle tender beef and rich gravy over the egg noodles.
- Garnish with fresh parsley and a sprinkle of black pepper.
