- 6 beef chops (such as chuck or rib-eye)
- 1 packet ranch seasoning
- 1 packet au jus seasoning
- 10–12 pepperoncini peppers
- 1/4 cup pepperoncini pepper juice (optional)
- 1/2 cup unsalted butter, sliced into pats
Instructions
- Optional Step: Sear the beef chops for a couple of minutes per side in a skillet over medium-high heat with a bit of oil or butter for a richer flavor.
- Arrange beef chops in a 5-quart or larger slow cooker.
- Sprinkle the ranch and au jus seasoning packets evenly over the beef chops.
- If using, pour the pepperoncini juice around the beef for added tang.
- Place the pepperoncini peppers on and around the beef for just the right amount of heat and flavor.
- Layer the butter pats generously over the beef.
- Cover and cook on low for 2-3 hours, or high for 1-2 hours, until the beef reaches an internal temperature of 145°F.
